You can drop the roof anytime - as long as it's not raining too heavily.  The only advice I would give is to scrape the ice off the windscreen before you lower the roof - I learnt this when I realised that I then had to remove the ice from the seats!

Oh, really?  Whoops!  I know that the roof is a lot stiffer when cold, and it takes care to get the glass to lie flat.
