power steering speed?

I'm noticing more than ever(possibly due to other mods)... that I'm capable of steering faster than my power steering is..

If I turn REALLY hard+fast then the wheel goes about 1/4 a turn then stiffens up (its free if you turn slower)... so its like the PAS assistance can only keep up with slower steering..

I've got electric PAS on my other car, so i'm struggling to remember if this is just a generic issue with hydraulic systems or if theres something I could do to help..

It also happens if you turn back,, so for example saw a pothole the last minute and swerved hard then back again, the return would have low assistance..

Fluid level is good.. U/J seems good.. no funny noises from pump etc...  no feelable play in the rack.

normal.. or odd?? bearing in mind I'm talking about VERY hard movements.. not day to day driving.

perfect analogy would be corn startch, keep it slow enough and its low resistance, soon as you try to turn too fast it firms up..
