I want to fit new manifold studs when my Zero manifold arrives and I'm wondering about stainless steel or even fancy-pants titanium so they don't go all rust-ugly again. I assume this is ok as they won't be in contact with mild steel and I'd use some copper slip on the threads for good measure?

Yep.  Stainless in various lengths on ebay. Copper nuts is a good idea.

Be prepared not to be able to remove some studs from the block ... I had to accept a mix of old and new studs.

Sometimes the nuts are seized on the stud & they round-off, sometimes the seizure brings out the stud. And sometimes the stud shears.  The latter hasn't happened to me, but I have seen it mentioned.  A week's worth of penetrant is a good idea.

I highly recommend these.  https://www.screwfix.com/p/erbauer-hex-shank-bolt-nut-remover-set-6-pcs/6083D?tc=RB4

They were recommended to me, & I've used them on various jobs & they've never failed me.  Don't use an ordinary socket (if using new nuts), - straight on with these.

Ordered. Thanks for the tips.
