bit unsure about the locking the car and turning sensors on,  how does this work?

one press to lock,  2 to have locked and inside sensors on?

then one unlock to turn everything off?

I think it is one press to lock doors and alarm car and a second press within 4 seconds to double lock (i.e. stop inside door handles opening doors.  Then 1 to unlock regardless of initial state.
Official - old git alert. 42 years old!
Facts  are meaningless - they can be used to prove anything.

2004 MR2 in silver with hardtop, leather, aircon and only 1 door handle.(11 happy years together and counting!)

As above but if you press the lock button a third time within 2 seconds of the second time, the internal sensors will be disabled. Good for when you wash the car to stop the alarm going off.

Yep and:

You get one short indicator flash when you lock the car.
One short flash when you deadlock the car (second button press)
Long flash when you disable the sensors (third press)

Unlocking flashes twice, or four times if the alarm has gone off at some point since it was locked, if memory serves  s:) :) s:)
